Amadeus Francis Symonds was a local preacher, Justice of the Peace and chairman of Para Wirra district, he took up land at Chain of Ponds in 1848. The first bible christian Methodist services in the district were held at his old farm house, continuing until he laid foundations for the local church. One of the earliest vineyard wineries ever mentioned in the local Adelaide Hills papers, much of the fruit grown to Chain of Ponds has been a component of Penfolds most memorable vintages, the finest parcels are set aside and vinified under the estate's own label.

Celestial Bay is the achievement of Michael and Kim O'Brien's long standing passion for wine, an adventure which led them to the Margaret River region in search of property most suitable for viticulture. The perfect location was identified on Metricup Road in Wilyabrup. A former dairy farm, the site provides all the necessary requirements, good soil, a moderate maritime climate and reliable rainfall. Fine fruit characters, freshness and definition, the aim is to emulate the French approach which values structure and balance over obtuse power and depth.

Margaret River is renowned for iconic Cabernet wines which capture the effect of refreshing maritime winds on the vines. Reginald Langdon Buller served in the Australian Navy during both world wars. In 1951 he acquired land at Beverford near Swan Hill for the purpose of expanding his winemaking operations outside of Rutherglen. Following the establishment of new vineyards, a winery and distillery, Buller looked forward to releasing wines under the Beverford label. After many vintages, the mature vines are yielding some of the region's most exquisite Cabernet Sauvignon. Beverford offers great depth, sophistication and weight of fruit in a completely satisfying everyday wine.

Crafted by a rising star of the Padthaway region, recipients South Australian Cabernet Of Year Trophy and runner-up South Australian Wine Of Year. To create nothing but the best, Browns have employed the peerless expertise of the stellar O'Leary Walker winemaking team. A stately Victorian Cabernet Sauvignon and the Brown Brothers flagship, released at five years of age. The historic Metala Vineyard has been Adams family property since the 1850s. Traditionally sold off to renowned national brands, it was not until the 1990s that Tom and Guy Adams began to send the pick of their harvest to the neighbouring Lake Breeze wineworks for bottling under their own estate label. Brothers In Arms has become one of Australia's most successful exports, recognized throughout the world of wine for its excellence and consistency. Langhorne Creek Cabernet Sauvignon is famous, Brothers In Arms add a measure of good Malbec to No.6 for aromaticness, balance and complexity.

The Adams brothers carry the distinction of farming the oldest family owned Cabernet Sauvignon vines in the world. Planted to fourteen rows of Cabernet in 1891 by estate patriarch Arthur Formby, the distinguished Metala property yields some of the most highly sought fruit in the nation. The original plantings remain productive, forming the backbone of fruit for Brothers In Arms. Defined by its redolent cassis, dark bramble and mulberry leaf characters, eighteen months maturation in the finest French oak barriques achieves a seamless palate, the most elegant tannins and refined satin finish.

It was in 1881 that a fine gentleman by the name of Daniel McGregor paid 62 pounds and 2 shillings for a Crown Grant of a hundred acres. The yearly rent for Sussex Location 165 on the fertile banks of Willyabrup Brook was a single peppercorn paid each year on the 25th March, or soon thereafter as demanded. In the 1980s it was replanted to vines and today is one of the Margaret River's most inestimable sites for first growth Margaret River Cabernet Sauvignon. A long lived wine of luxury and complexity, drinking superbly upon release.

The very limited release Walter Reserve is a wine of stature and opulence, an outstanding Cabernet Sauvignon grown to the rich, predisposed soils of Langhorne Creek. Assembled from a fastidious selection of the best barrels Cabernet, all originating from the estate's superlative vineyards, nourished by the flooding of Bremer River. Bremerton are in a unique position to keep all the individual parcels of Cabernet separate until completion, for the purpose of isolating the most exceptional lots, from the time of picking through to vinification and maturation.

Cabernet Sauvignon boasts a long history in Langhorne Creek. It was the secret ingredient in many of the nation's most memorable vintages, maestro Wolf Blass called on Langhorne Creek Cabernet for his most salubrious editions of red wine. The Willson family had enjoyed a distinguished reputation as growers of the finest Cabernet for many years before establishing their own label. Coulthard is the pick of the Bremerton harvest, exactingly crafted to showcase the aromatic black fruit flavours and succulent tannins which Langhorne Creek does best.

The salubrious Cabernet wines of Margaret River are famous around the world for their bold, vivid fruit, statuesque structure and penetrating dark berry characters. A confluence of climate and soils, prevailing westerlies and fine soils seem to emulate the propitious terroirs of Bordeaux. It is here that the grapes fulfill their promise to the Australian continent. Breathing Space take their pick of the crop, minimally handled to capture and preserve the conspicuous Margaret River regionality, ensuring that fruit is the defining feature.

From fruit grown to one of Coonawarra's most eninent small vineyards, the superior Brand's Laira Block 1, planted in 1971. The precious vines yield scant harvests of the most extraordinary quality grapes which translate into the most remarkable wine. McWilliams reserve the elite parcels from this treasured viticultural asset to construct a pure single vineyard wine, one of the nation's great editions of Cabernet Sauvignon.

McWilliams have long expressed an affinity for the unique red earth soils which consistently yield the big boned, statuesque style of Australian red wine. Plant a six inch nail, water it and in a year you will have a crowbar! said John James McWilliam when he surveyed the ferrous red soils of Hanwood in 1913. Today, McWilliams own and operate many of the most salubrious terra rosa sites in Coonawarra, retaining the pick of the crop, for a pure Cabernet wine from the prestigious Laira Vineyard.

Captain Stentiford established his Shiraz vineyard in 1896, naming the property Laira after a merchant trader. Plantings of Cabernet came much later and have since been the source of memorable single vineyard wines. Laira's exceptional character shines when the grapes are fashioned into a pure Cabernet wine, encapsulating the combination of climate and soil, aspect and fruit, that stamps this historical vineyard with individuality. The flavours are distinctly Coonawarra, but the perfume and succulent fruit characters are conspicuously Brands Laira.

Distinguished Langtons Classification. Doug and Emma Bowen hold a very strong belief in the hand pruning of vines. Such old fashioned care improves evenness of budburst, bunch exposure and ripeness, for restricted yields of the most intensely flavoured Cabernet grapes. A holistic management of the soils is crucial, all plantings are closely husbanded and individually managed, local fauna is encouraged to be a part of the ecosystem. It is this painstaking nurture of the vine which translates into an enduring quality of Coonawarra Cabernet Sauvignon.

Excellent Langtons Classification. Exclusively estate grown Cabernet Sauvignon, one of Coonawarra's finest. The low yielding vineyard, planted to the magical Terra rossa soils, is dry grown and hand arch cane pruned, it traditionally yields limited crops of intensely flavoured fruit. Skilled use of traditional oaking techniques achieves a wine that's integrated and seamless, as delicate fine grain French oak supports the essential Coonawarra characters of violets and bramble berry, scorched earth and blueberry cassis perfumes.

Mulberry Tree is the quintessential Langhorne Creek Cabernet Sauvignon, named after an ancient mulberry tree growing right in the middle of an old vineyard, established in the 1920s. Fruit is treated to the traditional regimen of open vat and barrel ferments, followed by an old fashioned press into a selection of seasoned and new, French and American oak hogsheads for malolactic and a year's maturation. A deliciously dark berry wine, the palate is plump and fleshy, rich and round, redolent with hints of eucalypt and mint, its exceptional length is supported by chewy, toothsome tannins.

Bleasdale are Australia's second oldest family owned winery, established 1850 by English migrant Frank Potts. Potts built much of Adelaide's early colonial works before settling down to his homestead at Langhorne Creek. A prolific accumulator of trophys and gold medals, Bleasdale has claimed Best Australian Red Trophy at the prestigious London International Wine Challenge. An excruciatingly limited release Cabernet Sauvignon, assembled around a core of elite parcels picked off the Bleasdale estate Mullianna and Reed Patch Blocks.

A compilation of bespoke parcels Cabernet, hand chosen off a tally of superior, limited yield sites across the premier viticultural precincts of Adelaide Hills, Macclesfield, Birdwood and Kersbrook. Bunches are crushed into fermenters for a week on skins, followed by transfer to a luxuriously high proportion of new French oak barriques for eighteen months maturation before assemblage. Full bodied, fleshy, long silky tannins in support of the defined Cabernet muscularity, its cassis, cedar and black bramble opulence to match with entrecote, Jus and shallot.

There are few Victorian grown Cabernet Sauvignon as imposing and statuesque as those of Great Western. The parched, ruddy soils and brisk arid climes breed a style of Cabernet as gallant and ornate as the distinguished growths of Tuscany and Bordeaux. Small yields from gnarled old vines, a precious harvest of desiccated little berries, defined by a concentration and intensity of flavour. Its vivid varietal elements of black brambles, currant and cassis, supported by a tapestry of tannins and scented with the exuberant perfumes of violet blossoms, mocha and leaf.

A dry grown, single vineyard, hand crafted Pyrenees Cabernet Sauvignon. George Berry started his vineyard and orchard in 1862 on the banks of Carapooee Creek. Whilst some rootstock 110 to 140 years old can still be found, today's Berry Bridge are the fruit of plantings by Jane Holt and Roger Milner. Milner developed his passion for viticulture after several vintages at Chateau Reynella in the 1970s. He joined forces with Holt BAppSc(WineSc) & AssocDegAppSc(Wine-growing), and happily took on the challenge of re-developing the site.

The pick of estate grown Cabernet Sauvignon from the Beresford property at Blewitt Springs, each parcel of fruit is separately vinified in a selection of traditional two and four tonne open top fermenters, followed by an extravagent three years maturation in a mix of seasoned and new French and American oak hogsheads. The signature softness of McLaren Vale Cabernet, blackberries and currant, mulberry and raspberry fruits, supported by tobacco leaf oak and the herbaceousness of bay leaf and mint, a well proportioned wine of seamless tannins, structure and length.

From the slower ripening blocks at Beresford Estate vineyard in the premier viticultural precincts of Blewitt Springs. A week of vinification in small open top fermenters, hand plunged, rack and returned for optimal extractions, gently basket pressed into a selection of seasoned and new French and American oak hogsheads for a year's maturation. A lifted nose of blackcurrants and violet, raspberries and vanilla, plum fruits, cherry and a sprinkle of milled spice, its fine tannins and fragrant cedar oak bring Beresford to a balanced, savoury finish.

The long, late ripening conditions and exhilarating continental microclimes of Barwang Vineyard, marked by cold nights and warm summer days, produce red wines of considerable flavour profile, power and extract. Since the 1996 edition, Barwang Cabernet Sauvignon has claimed trophies and prestigious accolades, with every vintage collecting at least one significant gold medal. An exemplary Cabernet wine with a profound, mouth filling palate, to accompany herb crusted rib eye or bacon wrapped quail, braised hare sous jus or your favourite recipe lamb.

Great Dividing Range is an assemblage of harvests from three superlative sites. The �Silo Block� at Hilltops Barwang Vineyard, selected for its bright, brambly, dark fruits and soft generous tannins. The �Forgotten Block at Hilltops Mokinhui Vineyard, chosen for its bright cassis, pristine dried herb and dark chocolate fruit flavours, forming the backbone and contributing structure. A select component picked off �Block 10 at Rosebank Vineyard in the Grampians, brings richly concentrated blackcurrant characters, roundness and flesh.

Doug Balnaves was a shearer of Merino sheep, recording his count in the tally book to be paid by the number he had sheared. He managed sheep before taking up a career as a grower, he now plays a senior role in many of South Australia's principal wine industry associations. The Balnave vineyards are divided into small blocks of between one and two hectares, the character of each can be quite unique. The final assemblage of Merlot and Cabernet Sauvignon is a compilation of selected rows off the estate's Walker, Quarry and Dead Morris blocks, treated to varying regimens of oak barrel ferments and extended macerations. Grapes are predominantly sourced from the venerable Arthur's Block, where gnarled old vines continue to deliver harvests of the finest fruit anywhere in McLaren Vale. Balgownie Cabernet Sauvignon always attracts attention, displaying the elusive holy grail of exemplary varietal definition with distinctive Bendigo regionality, a tradition which has positioned Balgownie as one of Victoria's most cherished Cabernet wines. Balgownie have established a reputation for being long lived whilst offering the ripeness of fruit to provide immense drinking pleasure on release. All grapes are from estate vines well over twenty five years of age, the earliest planted in 1969, grown to rich Bendigo soils, the secret of Balgownie's success.
